Par contre, les aliments ferment\u00e9s ne r\u00e9pondent pas aux crit\u00e8res pour un probiotique en raison de leur <u>manque de standardisation<\/u> de leur contenu bact\u00e9rien. Le nombre de bact\u00e9ries pr\u00e9sentes d\u2019un produit \u00e0 l\u2019autre varient contrairement au contenu d\u2019un probiotique qui est standardis\u00e9. Par exemple, lorsque vous achetez un probiotique contenant 25 milliards de bact\u00e9ries par capsule, la compagnie vous garantit cette quantit\u00e9! Alors que dans une bouteille de <a href=\"https:\/\/epithelia.ca\/blogue\/le-kombucha-un-choix-sense\/\">kombucha<\/a>, la quantit\u00e9 de bact\u00e9ries pr\u00e9sentes peut varier d\u2019un contenant \u00e0 l\u2019autre! Les conditions environnementales et les param\u00e8tres de fermentation peuvent faire diff\u00e9rer le nombre de bact\u00e9ries pr\u00e9sentes.<\/p>\n<p style=\"text-align: justify;\">Un autre enjeu pour l\u2019effet \u00ab probiotique \u00bb est que les bact\u00e9ries se rendent \u00e0 l\u2019intestin ! Dans les capsules, les bact\u00e9ries sont \u00ab prot\u00e9g\u00e9es \u00bb pour r\u00e9sister \u00e0 <a href=\"https:\/\/epithelia.ca\/blogue\/reflux-gastro-oesophagiens\/\">l\u2019acidit\u00e9 de l\u2019estomac<\/a>. Dans les aliments ferment\u00e9s, la majorit\u00e9 des bact\u00e9ries sont \u00ab d\u00e9truites \u00bb \u00e0 l\u2019estomac! Les \u00e9tudes rapportent qu&rsquo;une faible proportion des bact\u00e9ries probiotiques des aliments ferment\u00e9s r\u00e9sistent \u00e0 l&rsquo;acidit\u00e9 de l&rsquo;estomac et peuvent atteindre l&rsquo;intestin.
