{"id":749,"date":"2021-10-14T17:24:35","date_gmt":"2021-10-14T21:24:35","guid":{"rendered":"http:\/\/localhost\/a-martin\/2021\/11\/09\/salade-dorge-poulet-et-legumes\/"},"modified":"2025-09-23T14:26:22","modified_gmt":"2025-09-23T18:26:22","slug":"dorge-chicken-and-vegetable-salad","status":"publish","type":"post","link":"https:\/\/epithelia.ca\/en\/recettes\/repas\/salade-dorge-poulet-et-legumes\/","title":{"rendered":"Barley, chicken and vegetable salad"},"content":{"rendered":"<p><b>Ingredients<\/b><\/p>\n<p><span style=\"font-weight: 400;\">15 ml (1 tbsp.) canola oil<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1\/2 small red onion, finely chopped<\/span><\/p>\n<p><span style=\"font-weight: 400;\">250 ml (1 cup) hulled barley<\/span><\/p>\n<p><span style=\"font-weight: 400;\">60 ml (\u00bc cup) white wine<\/span><\/p>\n<p><span style=\"font-weight: 400;\">250 ml (1 cup) sodium-reduced chicken broth<\/span><\/p>\n<p><span style=\"font-weight: 400;\">375 ml (1 \u00bd cups) water<\/span><\/p>\n<p><span style=\"font-weight: 400;\">12 to 15 asparagus spears, cut into sections<\/span><\/p>\n<p><span style=\"font-weight: 400;\">2 chicken breasts, 125 g (approx. 1\/4 lb) each, cooked and sliced<\/span><\/p>\n<p><span style=\"font-weight: 400;\">6 stalks celery, thinly sliced<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 red bell pepper, diced<\/span><\/p>\n<p><span style=\"font-weight: 400;\">1 yellow bell pepper, diced<\/span><\/p>\n<p><span style=\"font-weight: 400;\">24 cherry tomatoes, halved<\/span><\/p>\n<p><span style=\"font-weight: 400;\">125 ml (1\/2 cup) parsley, fresh and chopped<\/span><\/p>\n<p><i><span style=\"font-weight: 400;\">For the dressing :<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">30 ml (2 tablespoons) olive oil<\/span><\/p>\n<p><span style=\"font-weight: 400;\">15 ml (1 tbsp.) white wine vinegar<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Salt and pepper to taste<\/span><\/p>\n<p><b>Preparation<\/b><\/p>\n<ol>\n<li><span style=\"font-weight: 400;\"> Heat oil in a saucepan over medium heat. Cook onion for 2 to 3 minutes.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Add barley and stir. Pour in the white wine and heat until the liquid is completely reduced.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Pour chicken broth and water into saucepan. Cover, leaving the lid on&nbsp;<\/span><span style=\"font-size: inherit;\">Cook for 22 to 27 minutes over low-medium heat, until barley is tender.<\/span><\/li>\n<li>Add the asparagus to the pan. Stir and cook for 3 minutes. Remove from heat and allow to cool.<\/li>\n<li>Meanwhile, mix the vinaigrette ingredients in a salad bowl.<\/li>\n<li>Add the barley mixture, chicken, celery, peppers, tomatoes and parsley to the bowl.
