These apple and lentil bars are delicious for snacking and are a great way to enjoy apple season!

Ingredients
2cut apples
1tbsp (15 ml)lemon juice
A pinch of salt
1can (540 ml, 19 oz)canned lentils, rinsed and drained
½t. (125 ml)your choice of nuts (walnuts, Brazil nuts, almonds, cashews, etc.)
2t. (500 ml)rolled oats
½t. (125 ml)dry quinoa (uncooked)
⅓t. (80 ml)liquid egg whites
¼t. (60 ml)chia seeds
¼t. (60 ml)sunflower seeds
¼t. (60 ml)unsweetened dried cranberries
3tbsp (45 ml)maple syrup
2tbsp (30 ml)dark chocolate chips
1 ½tsp (7.5 ml)ground cinnamon
¼tsp (1.25 ml)ground nutmeg
Instructions
Preheat oven to 350ºF and line a rectangular baking pan with parchment paper.
Grate apples and mix immediately with lemon juice and salt.
In a food processor, process lentils and walnuts until a paste forms. Transfer to a large bowl.
Add all the other ingredients and the grated apples and mix well with a wooden spoon.
Pour the mixture into the pan and bake for about 30 minutes, or until the bars hold together well and are lightly browned on the surface (varies with oven).
Cool completely on a wire rack before slicing into 16 bars.
