Chicken fajitas with roasted peppers

Chicken marinade

lime juice

smoked paprika

cumin

dried oregano
Salt and pepper to taste

red bell pepper
cut into strips

yellow bell pepper
cut into strips

zucchini
cut into strips

olive oil

small corn tortillas

tablespoon
plain yogurt
or sour cream
Fresh coriander, chopped

Instructions
In a bowl, combine olive oil, lime juice, smoked paprika, cumin, oregano, salt and pepper.
Add chicken strips and coat well. Marinate for 15 to 30 minutes.
Heat a skillet over medium-high heat with 1 tablespoon olive oil.
Sauté peppers and zucchini for 5-7 minutes, until tender and lightly browned. Set aside for later use.
In the same pan, cook the marinated chicken for about 5 minutes on each side, until golden brown and cooked through.
Reheat tortillas, top with chicken, grilled vegetables and a touch of yogurt.
Add fresh coriander and a dash of lime juice to taste.

Vegetable version
Replace the chicken with grilled tofu cubes.
