Ingredients
Salad
Lettuce and/or spinach
coarsely chopped (quantity to suit your taste)

t. (125 ml)
coloured peppers
cut into small cubes
½
t. (125 ml)
of cucumbers
cut into small pieces
½
t. (125 ml)
cherry tomatoes
sliced in two
4
small fresh figs
trenches
Protein: your choice
Tofu marinated in spices and pan-fried
Cooked chicken pieces
Feta cheese
Grilled white fish
Creamy avocado sauce
½
ripe avocado
crushed
1
small gherkin
finely chopped (or 1 to 2 tbsp. relish)
Pepper to taste
Instructions
In a bowl, combine all the salad vegetables.
Prepare the avocado sauce and toss well into the salad.
Garnish with your chosen protein source.
Notes
For a complete meal, accompany the salad with small crackers or a slice of whole-grain bread.
