Egg salad sandwich - rich in fibre

Ingredients
Fibre-rich egg salad

whole eggs
hard-boiled
½
t. (125 ml)
cottage cheese 1 %
1
small green onion

lawyer
mature
¼
by t.
celery
finely chopped
1
tbsp (15 ml)
flaxseed
ground
1
tbsp (15 ml)
of relish
1
tbsp (15 ml)
fresh chives and/or parsley
½
tsp (2.5 ml)
ground cumin
Salt and pepper to taste
Sandwich
½
cup
arugula
2
tranches
of bread
whole grains preferred, your choice or bagel (see note)
Instructions
Hard-boil eggs, if not already done (boil over low heat for about 9 minutes, then cool).
In a bowl, mash cooked eggs and avocado with a fork. Add all remaining ingredients and mix until smooth. Season to taste with salt and pepper.
Garnish bread with egg salad and arugula.
Serve cold, accompanied by your choice of colorful crudités.
