Choice of whole grain bread (try our buckwheat rolls)
Bruschetta« vegetable»
½t. (125 ml)tomatoes, cut into small pieces
½t. (125 ml)bell bell pepper, cut into small pieces
1tbsp (15 ml)French shallot, finely chopped
1tsp (5 ml)balsamic vinegar
1tsp (5 ml)fresh chives
A few fresh basil leaves
Salt and pepper (to taste)
Trim
¼t. (60 ml)low-fat cottage cheese, grated
½tbsp (7.5 ml)camelina seeds
Roquette
A thin drizzle of camelina or olive oil
Instructions
In a bowl, combine tomatoes, bell bell pepper and shallot with balsamic vinegar and herbs. Adjust seasoning to taste.
In an oven or toaster, partially toast the bread. Remove from grill and add vegetables. Top with cheese and continue baking in oven until cheese has melted.
Just before serving, add arugula, camelina seeds and a drizzle of oil (if desired).
