Veggie Burger with Black Beans and Sweet Potato

Ingredients
1
tin (540 ml)
black beans
rinsed and drained
1
medium sweet potato
cooked and mashed
½
cup
rolled oats
ground
1
egg
or 1 tablespoon ground flaxseed + 3 tablespoons water for a vegan version
1
tablespoon
soy sauce
1
tablespoon
Dijon mustard
1
tablespoon
paprika
smoked
1
tsp.
cumin
ground
1
garlic clove
chopped
Salt and pepper to taste

tablespoon
olive oil
for cooking
Instructions
Mash the black beans with a fork or potato masher (leave a few pieces for texture).
Add mashed sweet potato, oat flour, egg (or substitute), soy sauce, mustard, spices and garlic.
Mix well until smooth.
Form 4 patties with your hands and place on a plate.
Heat the olive oil in a frying pan over medium heat.
Cook patties for 4-5 minutes on each side, until golden brown and crisp.
Toast burger buns.
Add toppings of your choice: lettuce, tomato, avocado, caramelized onions, cheese, homemade sauce, etc.
Notes
Tip
You can also bake the patties at 200°C (400°F) for 20 minutes, turning them halfway through.
