Cauliflower pizza crust
A pizza in which cauliflower, a prebiotic vegetable, has been added to the mix!

Ingredients
1
large cauliflower
1
tbsp (15 ml)
olive oil
2
tbsp (30 ml)
ground flaxseed
1
garlic clove
very finely chopped (optional)
2
tsp (10 ml)
Italian herbs
2
eggs
½
t. (125 ml)
light mozzarella
grated
Instructions
Preheat oven to 205°C (400°F).
In a food processor, process cauliflower in 2 or 3 stages. Cut into fine breadcrumbs.
In a bowl, combine cauliflower crumbs, oil, flaxseed, garlic and herbs. Add eggs and cheese. Stir again.
Using your hands, roll out the dough on a baking sheet lined with parchment paper or silicone sheet, depending on the size and height of the crust.
Bake for 25 minutes, until lightly browned. Remove from oven.
Assemble the pizza with the ingredients of your choice and bake again for 10 to 15 minutes.
