Cauliflower pizza crust

A pizza in which cauliflower, a prebiotic vegetable, has been added to the mix!

Ingredients

  • 1 large cauliflower
  • 1 tbsp (15 ml) olive oil
  • 2 tbsp (30 ml) ground flaxseed
  • 1 garlic clove very finely chopped (optional)
  • 2 tsp (10 ml) Italian herbs
  • 2 eggs
  • ½ t. (125 ml) light mozzarella grated

Instructions

  • Preheat oven to 205°C (400°F).
  • In a food processor, process cauliflower in 2 or 3 stages. Cut into fine breadcrumbs.
  • In a bowl, combine cauliflower crumbs, oil, flaxseed, garlic and herbs. Add eggs and cheese. Stir again.
  • Using your hands, roll out the dough on a baking sheet lined with parchment paper or silicone sheet, depending on the size and height of the crust.
  • Bake for 25 minutes, until lightly browned. Remove from oven.
  • Assemble the pizza with the ingredients of your choice and bake again for 10 to 15 minutes.
