Broccoli soup meal
This broccoli soup-meal is nutritious thanks to the inclusion of white beans, which provide protein and fiber!

Ingredients
1
tbsp (15 ml)
vegetable oil (camelina, canola, olive)
1
garlic clove
coarsely chopped
1
onion
coarsely chopped
2
t. (500 ml)
low-sodium vegetable broth
3
t. (750 ml)
broccoli
cut into florets
1
t. (250 ml)
white beans
drained and rinsed
Pepper to taste
Instructions
In a saucepan, sauté the garlic and onion in the oil over high heat for 5 minutes.
Add remaining ingredients and bring to a boil.
Cover, reduce heat and simmer for 15 minutes.
Using a stick blender, purée until smooth.
Serve and enjoy.
Notes
*Make sure it's gluten-free if you're celiac or gluten-intolerant.
