Broccoli soup meal

This broccoli soup-meal is nutritious thanks to the inclusion of white beans, which provide protein and fiber!

Ingredients

  • 1 tbsp (15 ml) vegetable oil (camelina, canola, olive)
  • 1 garlic clove coarsely chopped
  • 1 onion coarsely chopped
  • 2 t. (500 ml) low-sodium vegetable broth
  • 3 t. (750 ml) broccoli cut into florets
  • 1 t. (250 ml) white beans drained and rinsed
  • Pepper to taste

Instructions

  • In a saucepan, sauté the garlic and onion in the oil over high heat for 5 minutes.
  • Add remaining ingredients and bring to a boil.
  • Cover, reduce heat and simmer for 15 minutes.
  • Using a stick blender, purée until smooth.
  • Serve and enjoy.

Notes

*Make sure it's gluten-free if you're celiac or gluten-intolerant.
