Ingredients
3 Bananas, ripe
60 ml (¼ cup) butter, (at room temperature)
2 Eggs
170ml (2/3 cup) oat flour
60 ml (¼ cup) corn flour
30ml (2 tablespoons) cornstarch
85ml (1/3 cup) applesauce, unsweetened
15ml (1 tbsp.) cinnamon
10ml (1 teaspoon) baking powder
1 pinch salt
Preparation
- Preheat oven to 375F.
- In a large bowl, mash the bananas.
- Add soft butter and eggs. Mix well.
- Mix in the oat flour, corn flour and cornstarch.
- Add applesauce, cinnamon, baking powder and salt. Mix until smooth.
- Pour into a loaf tin and bake for 45 minutes.
