Ingredients

3 Bananas, ripe

60 ml (¼ cup) butter, (at room temperature)

2 Eggs

170ml (2/3 cup) oat flour

60 ml (¼ cup) corn flour

30ml (2 tablespoons) cornstarch

85ml (1/3 cup) applesauce, unsweetened 

15ml (1 tbsp.) cinnamon

10ml (1 teaspoon) baking powder

1 pinch salt

Preparation

  1. Preheat oven to 375F. 
  2. In a large bowl, mash the bananas.
  3. Add soft butter and eggs. Mix well.
  4. Mix in the oat flour, corn flour and cornstarch.
  5. Add applesauce, cinnamon, baking powder and salt. Mix until smooth.
  6. Pour into a loaf tin and bake for 45 minutes.
