A vegan breakfast that's simple, comforting and full of flavour!

Oat flakes, rich in soluble fiber, provide a long-lasting feeling of satiety, while chia seeds (or psyllium) support gentle digestion. Diced apple adds a fruity, slightly sweet touch, perfectly balanced by the natural acidity of blueberries. A dash of cinnamon, a spoonful of maple syrup or honey (optional!)... and you've got a bowl that's simple, healthy and satisfying.

Want to personalize it? Garnish it with fresh raspberries, slivered almonds or even a little plain yogurt (vegan or otherwise) for a protein and texture boost.

Ingredients

  • ½ cup (125 ml) rolled oats (not instantaneous)
  • 1 cup (250 ml) milk (lactose-free or unsweetened vegetable drink of your choice)
  • ¼ cup (60 ml) water
  • 1 tbsp (15 ml) chia seeds (or 1/4 teaspoon psyllium)
  • ¼ apple, peeled and diced
  • Add a small handful of blueberries
  • 1 tsp. honey or maple syrup, a pinch of cinnamon (optional)

Instructions

  • In a small saucepan, combine the rolled oats, milk, water and chia seeds.
  • Bring to the boil, stirring constantly to avoid lumps.
  • Reduce heat and simmer for 5 minutes, until oatmeal thickens and becomes creamy.
  • Add the apple and cinnamon during the last few minutes of cooking.
  • Pour into a bowl. Add additional toppings. Lightly sweeten if desired (honey or maple syrup).
  • Serve warm or hot.

Notes

Other garnish ideas: a few slivered almonds, a small handful of whole raspberries, plain Greek yogurt.
