Ingredients:

  • 1 onion, chopped
  • 227 g (1/2 lb) chicken, tofu, meat, fish, canned tuna (whatever's on hand)
  • 30 ml (2 tablespoons) olive oil
  • 8 eggs, lightly beaten
  • 560 ml (2 ¼ cups) milk
  • 2 liters (8 t.) stale bread, cut into cubes (loaves of
  • whole grains)
  • 1 liter (4 t.) baby spinach (watercress or arugula)
  • 750 ml (3 cups) grilled or cooked vegetables (asparagus, peppers, peas, broccoli, cauliflower, etc.)
  • 500 ml (2 cups) grated Gruyère cheese (cheddar)
  • or raclette)

Preparation:

  1. In a large frying pan, brown the onion and protein in the oil. Season with salt and pepper. Let cool.
  2. In a large bowl, combine eggs and milk. Season to taste with salt and pepper.
  3. Add remaining ingredients and mix well.
  4. Place in a 33 x 23 cm (13 x 9 in.) baking dish. Cover with plastic wrap and refrigerate for 4 to 8 hours. When in a hurry, let bread soak for 1 hour.
  5. Place rack in center of oven. Preheat oven to 180°C (350°F).
  6. Remove the plastic wrap and bake for about 1 hour, or until the center of the "strata" is cooked through.
  7. Leave to cool for 10 minutes and serve with a green salad.
