Beet powder 

Beet powder is made from whole beets that have been dehydrated and ground to a fine powder. Colorful and fragrant, it's a perfect addition to pasta meals, mashed potatoes, snacks, smoothies and even oatmeal. It's prized for its high content of polyphenols and betalains, powerful antioxidants with anti-tumor properties. What's more, beet is a prebiotic, promoting good digestive health by nourishing the gut's good bacteria.

Ingredients

  • 1 cup (250 ml) Medjool dates, pitted
  • 1 cup (250 ml) oat flakes* (a little extra)
  • 1 cup (250 ml) textured vegetable protein (PVP)
  • ½ cup (125 ml) unsweetened raisins
  • 2 tablespoons (30 ml) chia seeds
  • 2-3 tablespoons (30-45 ml) raw beet powder
  • 1 tsp (5 ml) pure vanilla extract
  • 1 tsp ( 5 ml( ground cinnamon

Instructions

  • In a food processor, blend all ingredients to a stiff dough that's easy to handle with your hands. Add water, a little at a time, if mixture is too dry.
  • Form 30 balls (about 1 tablespoon of dough per ball)
  • Consume within a week of preparation, or freeze and remove from the freezer when ready to enjoy or bring to an activity.

Notes

*Make sure they are certified gluten-free if celiac or intolerant.
  • The little balls freeze well in an airtight container or bag.
