Ingredients
Salad
- 4 small cooked beets julienned
- 2 carrots peeled and julienned
- 1 green apple julienned
- ¼ rutabaga peeled and julienned
- ¼ t. (60 ml) fresh parsley chopped
Vinaigrette
- 3 tbsp (45 ml) camelina oil (or olive) oil
- 2 tbsp (30 ml) apple cider vinegar (with mother)
- 1 orange (zest and juice)
- 1 lime (zest and juice)
- Salt and pepper
Instructions
- In a salad bowl, whisk together all the ingredients for the vinaigrette.
- Stir in salad ingredients.
