Ingredients
Cranberry base
- ½ cup frozen cranberries
- 2 à 3 tablespoon chia seeds
Cereal mix
- 2 tablespoon buckwheat flakes
- 4 tablespoon rolled oats
- 2 tablespoon of textured vegetable proteins (fines)
Fluid & trim
- ⅔ cup (or more, depending on desired texture) vanilla-flavoured soy beverage - unsweetened vanilla-flavoured soy beverage
- ½ apple diced, with peel (add when ready to eat)
Instructions
Express cranberry compote
- In a small saucepan, cook the cranberries with the water until they burst (about 5 minutes).
- Puree with a stick blender. Add chia seeds, mix well and let stand for 5-10 minutes.
- Pour the cranberry base into the bottom of a Mason jar (375 ml).
Cereal mix
- In a bowl, combine buckwheat flakes, oats and vegetable protein.
- Place this dry mixture on top of the compote.
- Add the soy beverage on top. It will slowly hydrate the cereal.
- Leave to stand for at least 4 hours, ideally overnight.
- Finish with apple pieces when ready to eat
