Beet Brownies
Decadent, tender, tasty and nutritious!

Ingredients
- 200 g (½ lb) white chocolate cut into pieces
- 2 tbsp (30 ml) of milk 2 %
- 3 cooked beets peeled and cut into pieces
- 2 eggs
- ⅔ t. (160 ml) whole wheat flour
- ½ tsp (2.5 ml) baking powder
- ⅔ t. (160 ml) of pecans coarsely chopped
- ¼ cup (50 g) melted white chocolate
Instructions
- Preheat oven to 180°C (350°F).
- Place 200 g (approx. 1/2 lb) white chocolate and milk in a bowl. Melt the chocolate in the microwave, then stir until smooth.
- Place beets in blender container. Blend until a grainy purée is obtained.
- Add the chocolate mixture to the blender and blend until smooth.
- Transfer the beet mixture to a bowl. Whisk in eggs.
- Gradually whisk in flour and baking powder until smooth.
- Add the pecans and stir.
- Grease a 20-cm (8-inch) square baking pan, then flour.
- Pour mixture into pan. Bake for 30-35 minutes, until a toothpick inserted in the center of the brownie comes out clean.
- Remove from oven and allow to cool.
- Meanwhile, in another bowl, melt the remaining white chocolate in the microwave.
- Drizzle the melted white chocolate over the brownie.
- Unmould and cut into 16 squares.
