Garnish with polyphenols by addinge berries (blueberries, strawberries, raspberries), camerises) or homemade applesauce. Don't forget to add a little protein (e.g. nut butter, yogurt grec) for a complete breakfast or snack.

Oat bran pancakes
Flourless pancakes are quick and easy to prepare for a nutritious breakfast or snack!
Servings: 2
Ingredients
- 1 egg
- ¼ t. (60 ml) plain soy beverage or kefir
- ⅓ t. (80 ml) oat bran
- 1 tbsp (15 ml) wheat germ
- 1 ½ tsp (7.5 ml) baking powder (baking powder)
Instructions
- In a bowl, whisk together the egg and milk, then add the dry ingredients.
- Heat a non-stick frying pan over medium heat.
- Spoon the batter into the pan and cook until the top is bubbly and the underside is golden brown.
- Turn over and brown the other side.
- Serve on a plate and top with fresh or frozen fruit, yogurt, applesauce or a little maple syrup.
