Chicken fajitas with roasted peppers
Ingredients
Chicken marinade
- 2 breasts chicken cut into strips
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 tsp. smoked paprika
- ½ tsp. cumin
- ½ tsp. dried oregano
- Salt and pepper to taste
Trim
- ½ red bell pepper cut into strips
- ½ yellow bell pepper cut into strips
- ½ zucchini cut into strips
- 1 tablespoon olive oil
- 4 small corn tortillas
- 2 tablespoon plain yogurt or sour cream
- Fresh coriander, chopped optional
- Lime wedges optional
Instructions
- In a bowl, combine olive oil, lime juice, smoked paprika, cumin, oregano, salt and pepper.
- Add chicken strips and coat well. Marinate for 15 to 30 minutes.
- Heat a skillet over medium-high heat with 1 tablespoon olive oil.
- Sauté peppers and zucchini for 5-7 minutes, until tender and lightly browned. Set aside for later use.
- In the same pan, cook the marinated chicken for about 5 minutes on each side, until golden brown and cooked through.
- Reheat tortillas, top with chicken, grilled vegetables and a touch of yogurt.
- Add fresh coriander and a dash of lime juice to taste.
