Chicken marinade

  • 2 breasts chicken cut into strips
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1 tsp. smoked paprika
  • ½ tsp. cumin
  • ½ tsp. dried oregano
  • Salt and pepper to taste

Trim

  • ½ red bell pepper cut into strips
  • ½ yellow bell pepper cut into strips
  • ½ zucchini cut into strips
  • 1 tablespoon olive oil
  • 4 small corn tortillas
  • 2 tablespoon plain yogurt or sour cream
  • Fresh coriander, chopped optional
  • Lime wedges optional

Instructions

  • In a bowl, combine olive oil, lime juice, smoked paprika, cumin, oregano, salt and pepper.
  • Add chicken strips and coat well. Marinate for 15 to 30 minutes.
  • Heat a skillet over medium-high heat with 1 tablespoon olive oil.
  • Sauté peppers and zucchini for 5-7 minutes, until tender and lightly browned. Set aside for later use.
  • In the same pan, cook the marinated chicken for about 5 minutes on each side, until golden brown and cooked through.
  • Reheat tortillas, top with chicken, grilled vegetables and a touch of yogurt.
  • Add fresh coriander and a dash of lime juice to taste.
