Ingredients:
- 500g (1.10 lb) Salmon fillet
- 60 ml (¼ cup) Coriander seeds, ground
- 30 ml (2 tbsp.) Brown sugar
- 5 ml (1 tsp.) Sea salt
- 5 ml (1 tsp.) Black pepper
- 30 ml (2 tbsp.) Olive oil
Preparation
- Preheat oven to 350F.
- In a bowl, combine ground coriander seed, brown sugar, salt and pepper.
- Cover the salmon with the mixture.
- In a large skillet, heat the olive oil over medium-high heat and sear the salmon, crust side first, for about 2 minutes, until nicely colored. Turn to cook skin side down and cook for a further 3 minutes.
- Place in the oven to finish cooking for 6 minutes.
- Serve with rice or other starch and sautéed vegetables.
