Ingredients:

  • 500g (1.10 lb) Salmon fillet
  • 60 ml (¼ cup) Coriander seeds, ground
  • 30 ml (2 tbsp.) Brown sugar
  • 5 ml (1 tsp.) Sea salt
  • 5 ml (1 tsp.) Black pepper
  • 30 ml (2 tbsp.) Olive oil

Preparation

  1. Preheat oven to 350F.
  2. In a bowl, combine ground coriander seed, brown sugar, salt and pepper.
  3. Cover the salmon with the mixture.
  4. In a large skillet, heat the olive oil over medium-high heat and sear the salmon, crust side first, for about 2 minutes, until nicely colored. Turn to cook skin side down and cook for a further 3 minutes.
  5. Place in the oven to finish cooking for 6 minutes.
  6. Serve with rice or other starch and sautéed vegetables.
