Ingredients

30ml (2 tbsp.) Garlic flower

15ml (1 tbsp.) Paprika

15ml (1 tbsp.) Cumin seeds, ground

30ml (2 tbsp.) Olive oil

2 red peppers, julienned

500ml (2 cups) Green beans, cut in 2

4 Tomatoes, diced

2 Sweet potatoes, diced

10ml (2 teaspoons) Curry powder

250ml (1 cup) Water

10ml (2 teaspoons) Soy sauce

5ml (1 teaspoon) Maple syrup

500g Haddock fillet (or other white fish)

Preparation

  1. In a skillet over high heat, sauté the garlic flowers, paprika and cumin in the olive oil for 1 minute.
  2. Add peppers, beans, tomatoes, sweet potato, curry powder, water and soy sauce. Reduce heat and simmer for 10 minutes.
  3. Add the maple syrup and fish and simmer for a further 8 minutes.
