Ingredients
30ml (2 tbsp.) Garlic flower
15ml (1 tbsp.) Paprika
15ml (1 tbsp.) Cumin seeds, ground
30ml (2 tbsp.) Olive oil
2 red peppers, julienned
500ml (2 cups) Green beans, cut in 2
4 Tomatoes, diced
2 Sweet potatoes, diced
10ml (2 teaspoons) Curry powder
250ml (1 cup) Water
10ml (2 teaspoons) Soy sauce
5ml (1 teaspoon) Maple syrup
500g Haddock fillet (or other white fish)
Preparation
- In a skillet over high heat, sauté the garlic flowers, paprika and cumin in the olive oil for 1 minute.
- Add peppers, beans, tomatoes, sweet potato, curry powder, water and soy sauce. Reduce heat and simmer for 10 minutes.
- Add the maple syrup and fish and simmer for a further 8 minutes.
