An alternative to classic pizza dough!

Did you know that of all the legumes, lentils are the easiest to digest for someone just starting to introduce these plant proteins? Another great reason to incorporate this pizza dough into your traditional pizza suppers!
Lentils and insoluble fibres:
Lentils are an excellent source of insoluble fibers, the type of fiber that promotes intestinal transit.
Pizza on lentil crust
So good and easy to do!
Servings: 4 scabs
Ingredients
- 2 ½ t. (625 ml) dried coral lentils
- 2 t. (500 ml) water
- ¼ t. (60 ml) Kalamata olives, rinsed and drained
- 1 tbsp (15 ml) dried basil
Instructions
- Preheat oven to 375ºF.
- Grind lentils in a coffee grinder to a coarse powder.
- Add the powder, water, olives and basil to the food processor.
- Heat a non-stick pan and, when hot, pour in a quarter of the liquid mixture. Cook for 3 minutes on each side.
- Place the crust on a baking sheet.
- Repeat the previous three steps 3 times to obtain 4 crusts.
- Garnish with ingredients of your choice.
- Bake until cheese is golden brown.
Notes
Example of garnish: A homemade tomato and basil sauce, tomato slices, basil leaves, onion and cheese.
