Veggie Burger with Black Beans and Sweet Potato

Ingredients

  • 1 tin (540 ml) black beans rinsed and drained
  • 1 medium sweet potato cooked and mashed
  • ½ cup rolled oats ground
  • 1 egg or 1 tablespoon ground flaxseed + 3 tablespoons water for a vegan version
  • 1 tablespoon soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon paprika smoked
  • 1 tsp. cumin ground
  • 1 garlic clove chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking

Instructions

  • Mash the black beans with a fork or potato masher (leave a few pieces for texture).
  • Add mashed sweet potato, oat flour, egg (or substitute), soy sauce, mustard, spices and garlic.
  • Mix well until smooth.
  • Form 4 patties with your hands and place on a plate.
  • Heat the olive oil in a frying pan over medium heat.
  • Cook patties for 4-5 minutes on each side, until golden brown and crisp.
  • Toast burger buns.
  • Add toppings of your choice: lettuce, tomato, avocado, caramelized onions, cheese, homemade sauce, etc.

Notes

Tip You can also bake the patties at 200°C (400°F) for 20 minutes, turning them halfway through.
