Maple BBQ chicken plate
A low-FODMAP recipe will quickly become one of your express meals of choice!
Servings: 2
Ingredients
- 1 red bell pepper cut into large cubes
- 1 t. (250 ml) broccoli cut into large florets
- 2 carrots peeled and thinly sliced
- 3 bok choy babies sliced
- ½ t. (125 ml) maple BBQ Harmonie sauce
- 300 g chicken breast cut into strips
- 1 ½ t. (375 ml) cooked basmati rice
- Pepper to taste or cayenne pepper or Korean Gochugaru pepper powder
Instructions
- Preheat oven to 425°F, then place parchment paper on a baking sheet.
- Pour the maple BBQ sauce, chicken strips, peppers, broccoli, carrots and bok choy into a large bowl. Place on baking sheet and bake for 15 minutes.
- Meanwhile, cook the basmati rice according to package directions.
- When ready to serve, simply place the chicken and vegetables over the rice and season with pepper to taste.
