Mediterranean bean salad

Ingredients

Salad

  • 1 ½ t. (325 ml) of Quebec beans sliced into small pieces
  • ½ t. (125 ml) cherry tomatoes
  • t. (80 ml) frozen peas thawed
  • ¼ t. (60 ml) feta cheese crumbled
  • Pepper to taste

Vinaigrette

  • 1 tbsp (15 ml) olive oil
  • 1 tbsp (15 ml) wine vinegar
  • ½ tsp (2.5 ml) Dijon mustard
  • ½ tsp (2.5 ml) Provence herbs
  • ½ tsp (2.5 ml) maple syrup

Instructions

  • Place all salad ingredients on a plate. Set aside.
  • Place the ingredients for the vinaigrette in a bowl. Mix vigorously, then spread over the bean salad.
  • Mix well. Serve.
