Mediterranean bean salad
Servings: 2
Ingredients
Salad
- 1 ½ t. (325 ml) of Quebec beans sliced into small pieces
- ½ t. (125 ml) cherry tomatoes
- ⅓ t. (80 ml) frozen peas thawed
- ¼ t. (60 ml) feta cheese crumbled
- Pepper to taste
Vinaigrette
- 1 tbsp (15 ml) olive oil
- 1 tbsp (15 ml) wine vinegar
- ½ tsp (2.5 ml) Dijon mustard
- ½ tsp (2.5 ml) Provence herbs
- ½ tsp (2.5 ml) maple syrup
Instructions
- Place all salad ingredients on a plate. Set aside.
- Place the ingredients for the vinaigrette in a bowl. Mix vigorously, then spread over the bean salad.
- Mix well. Serve.
