These apple and lentil bars are delicious for snacking and are a great way to get a bite of apple season!
Sources of fibers and proteins, they're sure to give energy to young and old alike.
We love apples for their high prebiotic content. Don't remove the peel, as it contains most of the antioxidants (particularly the flavonoids) and insoluble fibers promoting intestinal transit.
As an added bonus, these bars contain quinoa and oats for fiber-rich whole grains!
And don't forget walnuts, which are prized for their high vitamin content. omega-3 which is good for overall health.

Apple and lentil bars
Ingredients
- 2 cut apples
- 1 tbsp (15 ml) lemon juice
- A pinch of salt
- 1 can (540 ml, 19 oz) canned lentils, rinsed and drained
- ½ t. (125 ml) your choice of nuts (walnuts, Brazil nuts, almonds, cashews, etc.)
- 2 t. (500 ml) rolled oats
- ½ t. (125 ml) dry quinoa (uncooked)
- ⅓ t. (80 ml) liquid egg whites
- ¼ t. (60 ml) chia seeds
- ¼ t. (60 ml) sunflower seeds
- ¼ t. (60 ml) unsweetened dried cranberries
- 3 tbsp (45 ml) maple syrup
- 2 tbsp (30 ml) dark chocolate chips
- 1 ½ tsp (7.5 ml) ground cinnamon
- ¼ tsp (1.25 ml) ground nutmeg
Instructions
- Preheat oven to 350ºF and line a rectangular baking pan with parchment paper.
- Grate apples and mix immediately with lemon juice and salt.
- In a food processor, process lentils and walnuts until a paste forms. Transfer to a large bowl.
- Add all the other ingredients and the grated apples and mix well with a wooden spoon.
- Pour the mixture into the pan and bake for about 30 minutes, or until the bars hold together well and are lightly browned on the surface (varies with oven).
- Cool completely on a wire rack before slicing into 16 bars.
- Keep bars refrigerated.
