Bruschetta« tomato sandwich»

A spicy tomato sandwich!

Ingredients

  • Choice of whole grain bread (try our buckwheat rolls)

Bruschetta« vegetable»

  • ½ t. (125 ml) tomatoes, cut into small pieces 
  • ½ t. (125 ml) bell bell pepper, cut into small pieces  
  • 1 tbsp (15 ml) French shallot, finely chopped  
  • 1 tsp (5 ml) balsamic vinegar 
  • 1 tsp (5 ml) fresh chives  
  • A few fresh basil leaves  
  • Salt and pepper (to taste)

Trim

  • ¼ t. (60 ml) low-fat cottage cheese, grated 
  • ½ tbsp (7.5 ml) camelina seeds  
  • Roquette
  • A thin drizzle of camelina or olive oil

Instructions

  • In a bowl, combine tomatoes, bell bell pepper and shallot with balsamic vinegar and herbs. Adjust seasoning to taste.  
  • In an oven or toaster, partially toast the bread. Remove from grill and add vegetables. Top with cheese and continue baking in oven until cheese has melted.  
  • Just before serving, add arugula, camelina seeds and a drizzle of oil (if desired).
