Bruschetta« tomato sandwich»
A spicy tomato sandwich!
Ingredients
- Choice of whole grain bread (try our buckwheat rolls)
Bruschetta« vegetable»
- ½ t. (125 ml) tomatoes, cut into small pieces
- ½ t. (125 ml) bell bell pepper, cut into small pieces
- 1 tbsp (15 ml) French shallot, finely chopped
- 1 tsp (5 ml) balsamic vinegar
- 1 tsp (5 ml) fresh chives
- A few fresh basil leaves
- Salt and pepper (to taste)
Trim
- ¼ t. (60 ml) low-fat cottage cheese, grated
- ½ tbsp (7.5 ml) camelina seeds
- Roquette
- A thin drizzle of camelina or olive oil
Instructions
- In a bowl, combine tomatoes, bell bell pepper and shallot with balsamic vinegar and herbs. Adjust seasoning to taste.
- In an oven or toaster, partially toast the bread. Remove from grill and add vegetables. Top with cheese and continue baking in oven until cheese has melted.
- Just before serving, add arugula, camelina seeds and a drizzle of oil (if desired).
